Ingredients
- 8 servings
- 5 tb Bisquick 2 ea Eggs, beaten
- ½ c Parmesan cheese
- 2 tb Butter
- ¼ ts Salt
- 2 c Zucchini, grated
- ⅛ ts Pepper
Instructions
- Blend the Bisquick, Parmesan, salt, pepper.
- Add eggs.
- Mix zucchini into batter.
- Grease hot pan or griddle with butter.
- Pour batter into pan and fry 3 minutes on each side.
- Serve warm, a delicious way of serving zucchini.
- Make 8 to 10 fritters.
