Rhubarb Streusel Pie made with Bisquick

Rhubarb Streusel Pie

Ingredients

  • 6 servings
  • ------------------------------STREUSEL TOPPING------------------------------
  • 2 tb Butter; firm
  • ¼ c Brown sugar; packed
  • ½ c Bisquick
  • ¼ c Nuts; chopped
  • ----------------------------------FILLING----------------------------------
  • 16 oz Frozen rhubarb; thawed drain
  • /2 c Bisquick
  • ¾ c Milk
  • 2 tb Butter; softened
  • 2 Eggs
  • 1 ts Ground cinnamon
  • 1 c Sugar
  • ¼ ts Ground nutmeg

Instructions

  1. Heat oven to 375.
  2. Grease a 9" pie plate.
  3. Prepare Streusel Topping; reserve.
  4. Arrange rhubarb evenly in plate.
  5. Beat remaining ingred. til smooth 15 sec. on high in blender.
  6. Pour into plate. Sprinkle evenly with Streusel Topping.
  7. Bake until knife inserted in center comes out clean, about 40 minutes.
  8. Serve with sweetened whipped cream if desired. STREUSEL
  9. TOPPING; Cut butter into baking mix and brown sugar til crumbly; stir in nuts.
  10. HIGH ALT> Grease a 10" plate. Increase rhubarb to 2 ½-3 c.
  11. Decrease baking mix to ¼ c.; add ¼ c. Flour.

Lasagna Pie made with Bisquick

Lasagna Pie

Ingredients

  • 6 servings
  • ½ c Sm. curd creamed cot. cheese
  • 6 oz Tomato paste
  • ½ c Parmesan cheese; grated
  • 1 c Milk
  • 1 lb Gr. beef; cooked; drained
  • ⅔ c Bisquick
  • 2 c Mozzarella; shredded
  • ½ ts Salt
  • 1 ts Oregano
  • ¼ ts Pepper
  • ½ ts Basil Fresh parsley; chopped

Instructions

  1. Preheat oven to 400.
  2. Grease pie plate, 10x1 ½", or sq. baking dish-8x8".
  3. Layer cottage cheese and Parmesan cheese in pie plate.
  4. Mix cooked beef, 1 c. of mozzarella, the oregano, basil and tomato paste; spoon evenly over the top.
  5. Beat milk, eggs, baking mix, salt and pepper 15 sec. in blender on high speed, 1 min with wire whisk or hand beater or til smooth.
  6. Pour in to pie plate.
  7. Bake 30-35 min or til knife inserted in center comes out clean.
  8. Sprinkle with remaining cheese.
  9. Return to oven 1-2 min or til cheese is melted.
  10. Cool 5 min.
  11. Sprinkle with parsley.
  12. ½ recipe: Use 1 qt. square or round casserole.
  13. Divide ingredients amounts in half.
  14. Decrease beat time to 10 sec. in blender or 30 sec. with wire whisk or hand beater and first bake time to 25-30 min.
  15. HIGH ALT: no adj. necessary.
  16. For ½ pie, use 1 ½ qt. round or 1 qt. square.
  17. Bake 30-35 minutes.

Zucchini Cheese Biscuit Roll-Ups made with Bisquick

Zucchini Cheese Biscuit Roll Ups

Ingredients

  • 6 servings
  • 1 c Shredded zucchini follows
  • ¼ c Chopped onions
  • ½ c Cold water
  • 1 tb Margarine Bisquick Baking Mix
  • ½ ts Dried dill weed
  • 2 ¼ c Flour
  • ½ ts Basil
  • 2 tb Baking powder
  • 1 c Shredded sharp cheddar
  • ¼ c Dry milk powder
  • Cheese
  • 1 Stick margarine

Instructions

  1. Bisquick baking mix recipe ¼ c Oil Heat oven to 400 degrees.
  2. Cook and stir zucchini and onion in margarine until tender.
  3. Stir in dill weed and basil: reserve.
  4. Mix baking mix and water until soft dough forms: beat vigorously 20 strokes.
  5. Gently smooth dough into ball on floured cloth-covered board.
  6. Knead 5 times.
  7. Roll dough into rectangle, 15 x 9 inches: sprinkle with reserved zucchini mixture and the cheese.
  8. Roll up tightly, beginning at 15 inch side.
  9. Seal well by pinching edge of dough into roll.
  10. Cut into twelve 1 ¼-inch slices.
  11. Place slices, cut sides down, on greased cookie sheet.
  12. Bake until golden brown.
  13. 15 to 20 minutes.
  14. Serve immediately.
  15. Refrigerate any remaining biscuits.
  16. Makes 1 dozen biscuits.

Simple Sausage Balls made with Bisquick

Ingredients

  • 6 servings
  • 1 lb Skinless sausage (Owen's Hot Cheese works well)
  • 2 c Pioneer or Bisquick
  • 1 lb Grated Colby or Mild Cheddar

Instructions

  1. Mix together someone suggested using a zip-lock bag for mixing.
  2. Roll into about 1" balls.
  3. Place on a shallow baking pan (sides required to catch the grease) and bake at 350 deg F until done.
  4. Both cooked and uncooked balls.
  5. May be frozen.

Sausage Balls #2 made with Bisquick

Bisquick Sausage Balls

Ingredients

  • 6 servings
  • 1 lb Sausage meat
  • 2 c Cheddar cheese
  • 2 c Bisquick powder

Instructions

  1. Grate the cheese and allow it to come to room temperature (or grate it at room temperature).
  2. Mix (by hand, or with a fork or spoon) with the Bisquick powder and the sausage meat (crumbled).
  3. Form into bite-sized balls, around ¾" in diameter.
  4. Cook on foil or a baking pan at 325 F for about 20 minutes.
  5. I think I was also told that these store very well, but I'm not positive about that.

Mini-Quiches made with Bisquick

 Mini Quiches

Ingredients

  • 6 Servings
  • 8 oz Cottage cheese-small curd brown.
  • ¼ c Sour cream Hints: Add onion, bacon,
  • 4 oz Shredded sharp cheddar mushrooms, etc.
  • May be cheese frozen.
  • ½ c Bisquick (I used Recipe ease).
  • Reheat at 300 degrees or ¼ c Melted butter
  • Microwave 3 Eggs for 3 minutes on high.

Instructions

  1. Preheat oven to 350 degrees.
  2. Note: These are great!
  3. Mix all ingredients with sure to add cooked bacon Electric mixer.
  4. Grease and mini-muffin tins or use Some diced onion.
  5. This Teflon ones.
  6. Recipe only makes about
  7. Fill ¾ full.
  8. Bake for 1 ½ Dozen so be sure to at least 15-20 minutes or until double.
  9. Great make ahead appetizer!

Zucchini Fritters #1 made with Bisquick

Zucchini Fritters

Ingredients

  • 8 servings
  • 5 tb Bisquick
  • 2 Eggs, Beaten
  • ½ c Parmesan Cheese
  • 2 tb Butter
  • ¼ ts Salt
  • 2 c Zucchini, Grated
  • ⅛ ts Pepper

Instructions

  1. Blend the Bisquick, Parmesan, salt, pepper.
  2. Add eggs.
  3. Mix zucchini into batter.
  4. Grease hot pan or griddle with butter.
  5. Pour batter into pan and fry 3 minutes on each side.
  6. Serve warm, a delicious way of serving zucchini.
  7. Make 8 to 10 fritters.

Sausage Balls #1 made with Bisquick

Sausage Balls made with bisquick

Ingredients

  • 10 servings
  • 1 lb Bulk Sausage (Hot Or Mild)
  • 3 c Bisquick
  • 2 c Sharp Cheddar Cheese Grated
  • ⅓ c Water

Instructions

  1. Combine all ingredients and shape into balls the size of walnuts.
  2. Bake on cookie sheet at 350° F for 15 minutes.
  3. Makes about 5 dozen. NOTE: defrost and reheat at 350°F.

Ham and Cheese Appetizers made with Bisquick

Ham Cheese Scones

Ingredients

  • 6 servings
  • 2 c Bisquick baking mix
  • ¼ c Sour cream
  • ¾ c Cooked smoked ham, (finely 2 tb Smipped parsley chopped)
  • ½ ts Salt
  • 1 c Shredded Swiss or Cheddar
  • 2 garlic clvs, crushed (cloves)
  • cheese ⅔ c Milk
  • ½ c Chopped onion (fine)
  • 1 Egg
  • ½ c Grated Parmesan cheese

Instructions

  1. Heat oven to 350 degrees F.
  2. Grease rectangular pan 13x9 inches.
  3. Mix all ingredients; spread in pan.
  4. Bake until golden brown, 25 ot 30 minutes.
  5. Cut into rectangles, about 2x1 ½ inches.
  6. 36 appetizers.
  7. NOTE: High altitude directions (3500 to 6500 ft),
  8. Heat oven to 375 and decrease baking mix to 1 ¾ cups add ¼ cup all purpose flour.

Cheese Snack Rounds made with Bisquick

Ingredients

  • 6 servings
  • 1 Jar (5oz) Sharp pasteurized
  • ½ c Bisquick baking mix
  • Process cheese spread
  • 2 tb Toasted sesame seed

Instructions

  1. Mix cheese spread and baking mix.
  2. Shape into a roll, about 1 inch in diameter, on lightly floured cloth covered board.
  3. Roll in sesame seed, pressing lightly if necessary.
  4. Wrap and refrigerate until firm, at least 2 hours.
  5. Heat oven to 375 degrees F.
  6. Cut roll into ¼ inch slices.
  7. Place on lightly greased cookie sheet.
  8. Bake until golden brown, 8 to 10 minutes.
  9. Makes about 42 appetizers.
